Abstract

@ A healthy new kind of muffin made from sweet potatoes named "Sanshoku Satsu Muffin" was made at Gifu City Women's College. An investigation was carried out to learn people's reactions toward these muffins. Senior citizens were surveyed at a shop called "Silver Yanagase Salon" and at an exhibition of products. In the survey, nearly 88% of the people who tried the muffins were satisfied with their taste, and nearly 93% were satisfied with the texture. In these muffins, dietary fiber was more abundant than regular muffins, and there was less sodium and fewer calories.
